Grilling at a campsite or the beach isn't just for hot dogs, hamburgers, or ribs. Be sure to have some room on the grill for these mushroom foil packets. They're easy to make and can be prepared in advance.
Serves 4
Ingredients
- 1 pound large mushrooms, cleaned, trimmed, and sliced to 1/2 thickness
- 2 tablespoons fresh chopped herbs, such as mint, sage, thyme, or rosemary
- 2 to 4 garlic cloves, thinly sliced or chopped
- Salt and ground pepper, to taste
- 2 tablespoons extra virgin olive oil (EVOO), extra for brushing on foil
Steps

1Cut out four 12" x 12" squares of heavy aluminum foil.

2Mix the ingredients in a large bowl.Advertisement

3Use a glazing brush to lightly brush the dull side of the foil with olive oil.

4Add the mushroom mixture to each of the foil squares, evenly divided.

5Fold over the four square corners over the mixture. You'll want to make a small "teepee" by crimping up and sealing the top.

6Grill the packets over a hot temperature, for about 20 to 25 minutes.

7Check for doneness. The mushrooms should be tender and juicy.

8Carefully add the mushroom mixtures to plates. Watch out for large amounts of juice.

9Serve either as a side dish or eat from the foil packets. This is usually a tradition while camping.
