This is a simple method and recipe for tomato rice. You don't have to constantly stir or monitor the dish, and it comes out perfectly! This serves two to three people.

Ingredients

  • 2 cups of short-grain rice
  • 6 cups of water (the amount of water you add depends on how soft or hard you want the rice to be and/or the quality of the rice you use),
  • 1 tablespoon of salt
  • 2 tablespoons of oil (olive oil or any other oil)
  • 1 tablespoon of chili powder or black pepper
  • 1 large tomato or several smaller ones
  • Dried herbs

    Wash the tomato(es) and remove the stem(s). You may use a knife for this purpose. There is no need to chop them.

    Rinse your rice. Rinse the rice in a bowl under tap water, swishing the rice in the water until the water becomes cloudy. As this happens, pour out the cloudy water and replace with more water. Repeat until water is clear.

    Put the rice and water into the cooker. Spread out the rice so that all of it is underwater.

    Place the tomato(es) near the middle and on top of the rice in the cooker.

    Put the other ingredients into the cooker. If you do not like chili powder or black pepper, you may only add the salt and oil instead. You can also add any dried herbs you want for flavor; oregano is a good example.

    Close the lid of the rice cooker and turn it on to cook the tomato rice. Cook for as long as the cooker normally cooks rice.

    Use a serving spoon to thoroughly mix the contents of the rice cooker. Make sure that the tomato(es) have softened and intermixed with the rice. If you want to cook it for longer, turn on the cooker again and monitor intermittently until you get desired results.

    Serve as a side dish or mix vegetables or meat for an entree. Beans and rice is a complete protein and a good use of tomato rice.
