Scallions, also known as green onions, are very popular in Asian and Latin-American cuisine and can be used in a variety of ways. They can function in salads, be used as quick garnishes, or simply used for their pungent yet aromatic flavour. One popular way to prepare scallions is to make them into pancakes. This wikiHow explains two different ways you can prepare scallion pancakes.

  • 2 cups (475 ml) of all-purpose flour (more/less, as needed)
  • 1 tablespoon (15 ml) of salt
  • 1 cup (235 ml) of warm water (more/less, as needed)
  • Cooking oil (as needed)
  • Scallions, to taste (recommended 1-2 bunches)
  • Frozen scallion pancakes (typically sold in Asian grocery stores)
  • Approximately 1 tablespoon (15 ml) of cooking oil

Making Scallion Pancakes from Scratch

    Chop your scallions. Be sure to separate the darker green, leafy portions from the lighter green or white areas. Mince the green part of the scallions into relatively thin pieces, then set them aside.

    Tip: The white portion of the scallion is better for dishes which take longer to cook, which allows the flavor to absorb into the rest of the dish. They work great when they are used to sauté or simmer with other ingredients.[1]

    Form your dough. Mix the flour and salt in a large mixing bowl. Gradually pour in the water, a bit at a time, and knead the mixture. Repeat this until the water has been absorbed and a dough has been formed. If the dough is too dry or wet afterwards, add more warm water (if the dough is too dry) or flour (if the dough is too wet), up to 1 tablespoon (15ml) at a time and knead until a soft dough forms.

    Knead your dough. Once your pancake dough forms, transfer it to a lightly floured surface and continue kneading the dough until it reaches the consistency of a bread dough.

    Divide your dough. Form it into medium-large balls, depending on your desired pancake size. Repeat until all the dough is used up, then roll out the balls.

    Add your scallions and cooking oil. Place an equal amount of your chopped scallions on each pancake, spread them on the pancakes, and press them into one side of the dough. Add around 2 teaspoons (9.9 ml) of oil on each pancake (enough to spread out and cover the pancake), knead it to distribute the scallions, and form it into a round pancake, about 0.4 inch (1 cm) thick. Repeat this process for all the pancakes you have.

    Cook the pancakes. Place a frying pan on your stove and set it to medium heat, about 300-350° Fahrenheit (150-175° Celsius). Then, pour about 1 tablespoon (15ml) of cooking oil in the pan and tilt the frying pan to spread the oil around. When the oil is hot, place one scallion pancake in and let it fry until the pancake is golden-brown on both sides. This should take around 1-2 minutes per side.

Preparing Store-Bought Scallion Pancakes

    Purchase the pancakes. You can usually find scallion pancakes in the frozen section of an Asian supermarket. They may come in packages that resemble wide tofu containers. You can use however many pancakes you'd like for this method.

    Freeze the pancakes. For best results, the pancakes should be frozen before cooking.

    Prepare your equipment. When you're ready to cook the pancakes, place a frying pan on your burner and set the heat to medium. Alternatively, set a griddle to around 300-350° Fahrenheit (around 150-175° Celsius). Open the package of pancakes and leave them out, waiting to be cooked.

    Tip: If you do not plan to use the full package, be sure to only take out the number you wish to cook. Opening the container by snipping off one side of the outer bag makes this easier.
