Preparing Ingredients

    Cut the celery into long strips. Wash the celery before cutting. On a cutting board, begin cutting the celery into thin strips at a 20-degree angle. Aim to make each strip about 3mm thick. Set celery strips aside in a bowl.

    Cut beef sirloin into strips. On a cutting board, begin cutting the beef sirloin into as equally thin strips as the celery. Set aside in a separate bowl from celery.

    Create the sauce. Pour about 6 tbsp of soy sauce (or low sodium soy sauce) and 6 tbsp of oyster sauce into a small bowl. Mix the two sauces together until the oyster sauce is fully dissolved. Set the bowl aside.

Cooking Ramen Noodles

    Remove all the ramen noodles from the package. Open all the ramen noodle packages and set the noodles aside. Discard the sauce packets and seasoning.

    Bring the water to a boil. Pour 14 cups of water into a large enough stockpot. Place the pot on the stove and bring the water to a boil over high heat.

Cooking Mi Xao Bo

    Heat up the pan. Put a large pan over the stove on medium-high heat. Once heated, pour 1/4 cup of vegetable oil on the surface of the pan.

    Cook the celery strips. Pour the bowl of celery into the hot pan with oil in it. Cook for about 2 minutes, remember to stir occasionally.

    Cook the beef strips. Add the beef strips to the hot pan with celery in it. Stir until the beef has a little bit of red left in the middle.

    Add salt and pepper to taste. Depending on your taste, add as much salt and pepper you think it needs. Personally, I use about 1/4 teaspoon of both salt and pepper. Stir the seasoning into the beef and celery.

    Add the mixed sauce. Pour the soy sauce and oyster sauce mixture into the pan of celery and beef. Continue stirring.

    Fry the noodles. Carefully pour the noodles from the bowl that was set aside into the hot pan. Fold the beef and celery into the noodles. Cook for 2 more minutes. Continue stirring and folding.

    Serve the Mi Xao Bo. Scoop out the ramen into a large, deep bowl. There you have your Mi Xao Bo.
